Büscher's Hotel and Restaurant is a traditional family business that dates back to 1884. Andreas Büscher and his son-in-law, Patrick Büscher, the fourth and fifth generations, respectively, work together in the kitchen here. Tradition, regionality and creativity are not mutually exclusive. On the contrary, according to the Büschers, all these elements complement each other perfectly. It’s not just visitors to Bielefeld who know to appreciate the best ingredients, preferably from local producers, prepared and served with care. Büscher's Hotel and Restaurant has been a member of the Chaîne des Rotisseurs since 2009 and Slow Food supporters since 2011. Both Büschers have been active as Ambassadors of Good Taste for NRW since 2014.

Why are you the Ambassadors of Good Taste for the Teutoburg Forest region?
The slogan "Welcome to good taste" is true not only of our restaurant, but also for the Teutoburg Forest region. Our family has had its roots here for generations and we strongly identify with it.

Your opinion: why can North Rhine-Westphalia be described as an epicurean region?
North Rhine-Westphalia has a lot to offer: beautiful countryside, vibrant city life, a variety of cultural monuments, an eclectic dining scene and dedicated food producers – this diversity is what makes NRW so unique in Germany.

What trait distinguishes an epicurean?
In our opinion, epicureans exhibit traits like attention to detail, intellectual curiosity, openness to new ideas, an interest in aesthetics, a preference for variety (rather than the routine), an inclination towards new activities, new foods, etc. All these characteristics distinguish an epicurean.

You perform at your very best every day. What do you consider the perfect culinary start to the day?
That's simple: a leisurely breakfast and perusing the local paper.

Your dishes inspire your guests and colleagues. Which producers in your region inspire you?
There are many specialities on offer here in the Teutoburg Forest. We’re inspired for example by the weekly range of options presented by Bioland Hof Mertens-Wiesbrock (an organic farm), the fresh fish from Steinhagen (Patrick Köster, champion fisherman) and of course Petra Büscher with her herbs and vegetables from our garden.

Do you have any personal recommendations for visitors to the epicurean region of NRW?
Allow yourself to chill out after a busy day in the wonderful countryside, experience the cultural highlights or go shopping in one of our vibrant cities and enjoy one of the many great restaurants our region has to offer at the end of the day! Often the urban metropolises and dense forests of NRW are only a few kilometres apart.

Last but not least: what is your motto for personal enjoyment?
Goodness has its price. Saving on the cost of food is savings at the wrong end!
